Island Bites: Almond Cupcakes

Vegan Almond Cupcakes

This is a delicious vegan recipe. It has no eggs and no dairy products. Yet, the cupcakes are light and fluffy.

Ingredients

  • 2 cups granulated sugar
  • 1 1/2 sticks butter, softened
  • 4 eggs
  • 1/2 tsp vanilla extract
  • 1 tsp almond extract
  • 3 cups self rising flour
  • 1 cup almond milk
  • 1/4 cup canola oil

Instructions

  1. In a big bowl, cream butter and sugar until light and fluffy, about 5 minutes. With the mixer on low speed, add the eggs, 1 at a time. Add the extracts and oil. Mix well.
  2. In 3 parts, alternately add the flour and the milk to the batter, beginning and ending with the flour. Mix until just combined.
  3. Fill the cupcakes liners about 1/2 full. Bake at 350 for 13 to 15 minutes, or until a toothpick tester comes out clean. Cool the cupcakes completely before frosting.

Rich Chocolate Frosting


  • 1/4 cup vegetable shortening, room temperature
  • 1/4 cup unsalted butter, room temperature
  • 1 3/4 cups powdered sugar, sifted
  • 2 tbp milk
  • 1 tsp vanilla extract
  • 1/2 cup unsweetened cocoa

*Beat the shortening and butter together until well combined. Add the sugar and cocoa beat for about 3 more minutes. With the mixer running on low, add vanilla and milk until frosting is light and fluffy. You could add more milk if you want a softer consistency.


Velvety Almond Frosting


  • 1/4 cup vegetable shortening, room temperature
  • 1/4 cup unsalted butter, room temperature
  • 1 1/2 cups powdered sugar, sifted
  • 2 tbp almond milk
  • 1/2 tsp vanilla extract
  • 1 tsp almond extract
