This easy stir fry Chicken with Peaches and Ginger Recipe is one of my favourite low calorie easy stir fry recipes. In this easy stir fry chicken recipe, the sweetness of the peaches strikes a wonderful balance with the peppery bean paste and the slightly tart pickled ginger. The effect is wonderfully unique taste and the aroma of the peaches together with the spices is truly divine. This easy stir fly chicken is very simple to do. Another easy stir fry recipe that that's not only delicious but low in calorie as well.

Again, I would like to repeat that many Chinese stir fry recipes are cooked quickly, so ingredients need to be prepared in advance. I recommend having all the ingredients for a recipe chopped or sliced before you begin to cook.

Now let me give you some tips and explain some terms in Chinese cooking:

How to slice the chicken

Slice the chicken thinly. In addition to ensuring that it takes little time to cook, this also maximizes tenderness.

How to mince

When herbs or seasonings are described as minced, in this case the recipe calls for minced garlic, this usually means that the item is cut into thin slices then chopped until a coarse meal is obtained. This ensures that the ingredient releases its flavours faster during cooking.

Pickled Ginger

You can buy a jar of pickled ginger in the Chinese or Asian markets. Pickled ginger and preserved ginger are both forms that have been preserved in a brine of either sweet vinegar for the pickled version or sugar and salt for the preserved version.

Hot Bean Paste

You can also buy a jar or a can of hot bean paste in the Chinese or Asian markets. If you buy a can, transfer it right away in a jar. Hot bean paste is a spicy, salty paste made from fermented broad beans, soya beans, salt, and various spices.


Cooked Rice (Optional)

Most Chinese foods are eaten with rice but rice adds calorie to your meal. If you are watching calories, do not include rice.

LOW CALORIE STIR FRY CHICKEN WITH PEACHES AND PICKLED GINGER RECIPE

Prep time: 15 mins (marinade excluded)

Total time: 25 mins

Servings per recipe: 4

Calories per serving: 271


Marinade

  • 2 tbsp soya sauce
  • 1/4 tsp salt
  • a pinch of white pepper
  • 2 tsp cornstarch

12 oz boneless, skinless chicken breast, thinly sliced.

Sauce

  • 2 tbsp pickled ginger liquid
  • 1 tbsp ketchup
  • 1 tsp hot bean paste
  • 2 tbsp chicken broth

1 tbsp vegetable oil

1/2 cup roasted cashews

12 slices pickled ginger, cut into thin strips

1 tsp minced garlic

2 stalks celery, cut diagonally into thin strips

1-1/2 cups sliced canned peaches

salt, pepper and sugar to taste



  1. In a bowl, combine ingredients for marinade. Add chicken; mix well. Marinate for 30 minutes.
  2. In a small bowl, combine ingredients for sauce. Set aside.
  3. In a wok or nonstick skillet, heat oil over medium-high heat for 30 seconds. Add cashews and fry until golden brown and crispy, about 1 minute. Remove with slotted spoon and set aside.
  4. In the same pan, fry ginger and minced garlic until fragrant, about 30 seconds. Add chicken; stir fry 2 minutes. Add celery; stir fry for 1 minute. Add sauce mixture along with peaches; stir to mix until sauce is slightly thickened. Season to taste with salt. pepper and sugar, if desired. Add cashews and toss to mix.

Transfer to serving platter and serve immediately (with steamed rice).

Serves 4.
