Brie and Grilled Vegetables
One of My Favorite Summer Dinners
I believe in simple Summer meals especially in this terrible Summer heat. So this is a favorite meal of my family. And I will provide you with two versions. My American friends think it is a weird meal but I love it just the same. It is inexpensive and delicious.
Ingredients
Round of Brie (At Sam's Club $5 for a big one.)
Squash, Zucchini, Tomatoes et al. Cheapest and most abundant vegetables at the market or our of your garden.
Fresh Fruits like grapes and pears
3/4 cup olive oil
Fresh Basil form your home garden.
Preparation
I slice the vegetables as evenly as possible and I place them on a cookie sheets. I coat them with olive oil and then salt, pepper and basil.
I slice the top off the brie and I usually snack on it as I cook.
I chill the fruit in the refrigerator.
Cooking
With the oven preheated to 375 degrees, I place the brie and the vegetables in the oven. They only take about 20 minutes to cook so watch them carefully. You want your vegetables to be cooked but still crisp.
Serving
Place cooked Brie in the center of your plate and on one side place all you warm vegetables and on the other side have all your chilled fruit. Serve warm brie with roasted vegetables and fruit on each plate.

In Conclusion
I believe good food doesn't need a recipe. It is good on its own merit. I think food is often over thought and if you just have simple meal, it is great especially in a society which believes everything must be overly prepared. Don't get me wrong I like a fancy meal now and again as well but I prefer to buy them and live a much more simple existence in my home.
We don't eat processed foods at home and I know someone will tell me Brie is processed but it is about the only luxury we have on our lives so it is not much.
When I started this article I realized it isn't a recipe and it may not qualify as a meal although you have your protein, fruit and vegetable. You may want to add bread to this meal to round it out. I don't because I think it is good without the bread and we are on low carbs. In the Summers it is too hot to eat heavily and to me this is my favorite Summer meal.
It tastes great and is satisfying without all the expense and clean up of traditional meal.
