Easy Low-Fat Oven-Fried Chicken Recipes

Low fat ingredients and baking vs frying make these yummy chicken recipes a hit with your tastebuds and your waistline!

Spiced-Up Oven-Fried Chicken


  • 6-8 pieces boneless skinless chicken
  • 1/2 cup skim milk
  • 1 tsp poultry seasoning
  • 1 cup seasoned bread crumbs
  • 1 1/2 Tbsp onion powder
  • 1 1/2 Tbsp garlic powder
  • 2 tsp ground black pepper
  • 2 tsp ground red pepper
  • 1 tsp ground ginger


Two and a half hours before mealtime: Mix 1/2 of poultry seasoning into milk, combine all other dry ingredients in large ziploc bag. Dip chicken into milk, shake off excess, add to ingredients in bag, shake to coat. Refrigerate one hour.

One and a half hours before meal time: Preheat oven to 350 F. Spray baking dish with non-stick spray. Evenly space chicken in dish. Cover with aluminum foil, bake 40 minutes. Remove foil, bake additional 30 minutes or until meat comes easily off the bone.

Quick Un-fried Chicken


  • 6 pieces skinless chicken
  • 1 cup coarsely crushed corn flake cereal
  • 1 Tbsp all-purpose flour
  • 1 egg white
  • 1 tsp water
  • 1 tsp salt
  • pepper to taste


Preheat oven to 400 F. Spray cookie sheet with zero-calorie non-stick cooking spray. Combine dry ingredients (salt, pepper, flour, corn flakes) in shallow dish. Beat egg white lightly in pie plate. Dip chicken pieces into egg, then into flour mixture to coat. Place on cookie sheet, spray tops with cooking spray. Bake 40 minutes or until chicken turns golden brown.

Breaded Chicken Parmesan


  • 4-6 boneless skinless pieces chicken breast
  • 1-2 Tbsp unsweetened applesauce
  • 1/3 cup low-fat biscuit mix
  • 1/4 cup grated Parmesan cheese
  • 1 tsp oregano
  • 1 tsp basil
  • 1/4 tsp rosemary
  • 1/2 tsp dried parsley
  • 1/2 tsp garlic powder
  • 1 teaspoon salt
  • 1/4 teaspoon pepper


Preheat oven to 425 F. Combine biscuit mix and all dry ingredients with enough applesauce to create a thick batter. Coat chicken pieces, place in sprayed 13 x 9 baking dish. Bake 20-25 minutes, until browned and juices run clear.

Baked Bayou Chicken


  • 6 boneless skinless pieces chicken breast
  • 1/4 cup fat-free Italian salad dressing
  • 1/2 cup dried bread crumbs
  • 2 Tbsp chopped fresh parsley
  • 1 clove garlic
  • 1 1/2 Tbsp Creole seasoning
  • Instructions

    Two hours prior to meal: Measure dressing into gallon-sized ziploc bag, add chicken pieces, seal. Place in refrigerator to marinate 1 hour.

    One hour prior: Preheat oven to 325 F. Crush bread crumbs, mince garlic, and combine with other ingredients. Remove chicken from marinade and coat with crumb mixture. Coat a 13 x 9 baking dish with zero-calorie non-stick cooking spray. Bake 50 minutes or until juices run clear.

        I'm so glad you enjoyed it, Teeki1975! The first time I served it to my partner, he said something similar to your hubby. It's a great substitute for full-fat fried chicken, and easier to make, too!
