Passion Fruit (Lilikoi) Cupcake Recipe

Passion fruit is very common in Hawaii, where we call it lilikoi. These cupcakes are sweet with a tangy punch that will keep you satisfied until the very last bite.

This recipe makes a total of 12 cupcakes and will take about 30 minutes to make. Scroll down for more cupcake recipes.

  • Yields: Makes 12 cupcakes

Ingredients

  • 1 cup flour
  • 1/4 cup coconut, shredded
  • 1 tsp. baking powder
  • 2 eggs
  • 1 tsp. lemon zest
  • 1/3 cup butter
  • 1/2 cup sugar
  • 1/4 cup passion fruit pulp
  • 1/3 cup passion fruit pulp, (for glaze)

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit.
  2. Place cupcake holders in a muffin tin.
  3. Mix the coconut, flour, salt, and baking powder in a medium bowl.
  4. Beat the sugar, butter, and lemon zest in a large bowl.
  5. Add the eggs one-at-a-time and beat at a low speed.
  6. Mix in the dry ingredients slowly.
  7. Add the passion fruit pulp and beat until blended.
  8. Fill the cupcake holders 3/4 full of batter and put in the oven for 30 minutes.
  9. When firm on the top, let cool on a rack for 20 minutes.
  10. Use the extra lilikoi pulp to glaze the top of each cupcake.

      I don't think I've ever had passion fruit before or even seen it, but it sounds amazing as does this recipe. These cupcakes seem like they would be real moist and full of flavor since the pulp of the passion fruit is used.

      Oh these look great! I have passionfruit that grows in my yard, but since this isn't the right zone for them, many years they don't ripen before frost. I will have to keep this recipe for a good year (or resort to buying passion fruit).
