I like to present a menu for those who preparing for wedding party. From my friend's catering service experience, he given the following menu to me. I like to share these tasty dishes with all of you.I hope it will be a great cooking experience to you and your family.

Starter
Meat cutlet with salad,Appam with Mutton stew
Meat Cutlet:
Ingredients:
- Beef -½kg
- Ginger -1 tbsp(pasted)
- Meat masala -1 tea spoon
- Pepper powder -½ tbsp
- Salt –as required
- Onion -1ns (chopped)
- Curry leaves -7-8ns
- Egg white -1 egg
- Bread crumbs- 1 cup
- Oil –required for fry
Preparation:
- Cook the cleaned pieces of beef with chopped ginger, meat masala, salt and pepper powder.
- Cooked and cooled beef pieces should be minced.
- Add chopped ginger, green chillies and curry leaves to minced beef and mix well.
- Add meat masala and cook again until the mix become dry.
- Add mashed potatoes to it and make desired shapes with the mixture, Dip in egg white and put it in bread crumbs.
- Fry deep in oil and serve with salad.
Appam:
Ingredients:
- Cooked rice- ½ cup
- Raw rice- ½ kg Raw rice
- Grinded coconut-1ns
- Water -2 ½
- Sugar -3tbsp
- Yeast -1/2tbsp
- Salt -as required
Preparation:
- Soak dry raw rice in water for about 3-4 hours
- Drain the water and blend with grated coconut and some cooked rice in a blender/mixer.
- Put mixer of sugar, yeast, salt to the above mixer and place it for 7 hours for fermentation.
- Take a non-stick pan and heat it, spread the mixture and put a lid over it leave for 2 minutes.
- Finally take from it, that’s all one Appam is ready and continue to make for more guests.
Mutton Stew:
- Mutton -½kg
- Onion(chopped) -3ns
- Garlic paste-2tbsp
- Crushed green chilly-4ns
- Chopped ginger-1 piece
- Coconut milk- 2 cups of thick and 2cups of thin.
- Vinegar -2tbsp
- Pepper powder 2-4 tbsp
- corn flavor-1tbsp
- sliced potatoes -2ns
- Garam masala-1 tbsp
- Curry leaves and coriander leaves -few
- Coconut oil/refined oil-2-4 tbsp
Preparation:
- Take the mutton pieces; mix with pepper powder, vinegar/lemon juice and salt
- Take a pan and heat oil, add chopped onions, ginger, green chilly and garlic paste and stir.
- Add the mutton to it, put corn flavor, garam masala and sliced potatoes
- Mix together, add thin coconut milk and cook well.
- Finally add remaining thick coconut milk, curry leaves and boil for 3 minutes.
Main Course
Biriyani and fish fry:
Chicken Biriyani:
Ingredients:
- Basmati rice-2 ½ cup
- Chicken -1/2kg
- Onion -6ns(chopped)
- Tomato -3ns(chopped)
- Garlic -7 cloves
- Ginger -2s
- Green chilly -2ns
- Chicken masala-1 tbsp
- Coriander leaves and mint leaves – 1cup
- Ghee -1/2 cup
- Lime juice-2tbsp
- Chilly powder/pepper powder -1 tbsp
- Turmeric powder -1/4 tbsp
- Cardamom ,cinnamon ,cloves-3ns each
- Salt –as required
Preparation:
- Grind garlic, ginger, and green chilly, make it to paste.
- Take a pan, heat it and add some ghee.
- Add onions to it and fry it till golden brown.
- Then add garlic, ginger and green chilly paste and fry for 2 minutes. To it add sliced tomatoes, chilly powder, turmeric powder, garam masala, mint leaves, coriander leaves and salt. Cook till the masala becomes thick.
- Add chicken pieces, little water and mix.
- Cook until chicken is done.
For rice:
- Take cleaned basmati rice
- Boil water in vessel and the rice to it. Along with it add required salt, half spoon of turmeric powder, 1-2 cardamom, clove, cinnamons and 2-3 spoons of ghee.
- Cook rice until it is done, drain the water from it.
- Put a kadai and add some ghee, mix the above chicken pieces with the masala.
- Spread some lime juice and close the lid lightly and cook for 10 minutes in low flame.
- Take out and serve with chopped onion, tomato, pickle and yoghurt.
Vegetable Biriyani:
Ingredients:
- Basmati rice-2 ½ cup
- Carrot -2ns
- Cauliflower -1/2
- Green piece -1 cup(half boiled)
- Beans -1 cup
- Onion-5ns(chopped)
- Tomato -2ns(chopped)
- Garlic paste,Ginger paste,garam masala -1tbsp each
- Green chilly -4ns
- Coriander leaves and mint leaves – 1cup
- Ghee -1/2 cup
- Lime juice-2tbsp
- Salt –as required
preparation:
- Cook the vegetables, half cooked green peas.
- Take a pan, add some ghee; fry onions until it turns brown.
- Add garlic, ginger, green chilly paste, mix it and fry for 2 minutes.
- Then add some chopped tomato, garam masala, salt, mint leaves, cook for 10 minutes.
- Put the cooked vegetable and green peas to it and mix.
For rice
- Take cleaned basmati rice
- Boil water in vessel and the rice to it. Along with it add required salt, half spoon of turmeric powder, 1-2 cardamom, clove, cinnamons and 2-3 spoons of ghee.
- Cook rice until it is done, drain the water from it.
- Put a kadai and add some ghee, mix the above vegetable mix.
- Spread some lime juice, close the lid lightly and cook for 10 minutes in low flame.
Fish fry:
Ingredients:
- Fish – 6ns
- Garlic -20ns
- Red chilly paste-3tbsp
- Turmeric powder-1/2tea spoon
- Oil -4 tbsp
- Salt –as required
- Lime juice -1tbsp
preparation:
- Mix garlic paste, 2 tablespoons of oil, ground chilly, salt, pepper powder, turmeric powder and lime juice. Make a cut at the middle part of fish and fill the mix and marinate for 30 minutes. Put it in bread crumbs.
- Shallow fry in a pan in required oil until the fish becomes crisp
