Ground Beef Recipes for a Busy Life
Ground Meat to the Rescue
Imagine coming home after a long hard day at work, you are exhausted. The kids are running around, they're hungry. You just want to sit and relax. But, you have to make dinner. How great would it be for you to be able to reach in the fridge and take out a casserole and pop it in the oven?
Every one of these recipes can be made the night before so when you get home the next day you can just put them in the oven. How great is that? Dinner is virtually done when you turn on the oven. All you need to do is open up a can of veggies or throw together a quick salad while waiting for your terrific casserole to cook.
These casseroles also seemed to be loved by children and adults alike. So no whining and complaining just quiet as everyone stuffs themselves of this easy-peasy dinner.
Meanwhile you can sit, put your feet up, enjoy that cup of coffee or drink and relax. Dinner is taking care of itself. You'll be serving a family favorite.
Easy family recipes
This set of recipes are geared towards a family dinner. You put them together when you first get home, pop them into the over and let them cook while you get a few things done around the house. They are basic recipes that children and adults seem to love. Everyone of them can be served with a salad, baked potato or a serving of vegetables. Or you can combine any of the choices to make a satisfying, filling dinner. Preparation time is minimal and the enjoyment factor is high.
Another thing I thought I should mention, these recipes work equally well with other ground meats such as pork, turkey, and chicken.
Quick Family Meatloaf
Ingredients:
2 lbs ground beef
3/4 cups Italian bread crumbs
2 beaten eggs
1 pkg onion soup mix
1/3 cup ketchup
salt and pepper to taste
Directions:
Preheat oven to 325 degrees.
Combine all of the ingredients, make into loaf and place in baking pan.
Bake for 1 hour.
Serve with baked potato, vegetable or salad.
Mexican Meatloaf
Ingredients:
2 lbs ground beef
1 small onion, chopped
1 small green pepper, chopped
3 stalks celery, chopped
2 cloves garlic, minced
1 pkg onion soup mix
1 cup Italian bread crumbs
2 eggs, beaten
1 cup mexican blend shredded cheese
1 can diced tomatoes
Directions:
Preheat oven to 350 degrees.
In large mix together all ingredients.
Form into loaf and place in baking dish.
Cover and bake for 1/2 hour.
Remove cover and continue to bake for another 1/2 hour.
Serve with baked potato, vegetable or salad.
Hamburger pie
Ingredients:
1 lb ground beef
1 medium size chopped onion
1 chopped green pepper
2 cloves garlic
1 cup chopped mushrooms
1 pkg (16 oz) frozen mixed vegetables
2 cups leftover mashed potatoes or instant potatoes
1 beaten egg
1 beef bouillion cube
1/2 hot cup water
2 tsp cornstarch
salt and pepper to taste
Directions:
Preheat oven to 350 degrees.
In large fry pan brown ground beef.
Add onion, green peppers, garlic and saute until onion turns transparent.
Add frozen mixed vegetables and cook for about 5 minutes.
Mix together mashed potatoes and beaten egg until creamy.
Butter a 9 x 13 inch baking dish and spread potato mixture into it.
Add beef and vegetables.
Mix together beef bouillion, hot water, cornstarch, salt and pepper and pour over ingredients in baking dish.
Bake for 35 - 40 minutes.
Enjoy with a side salad.
Taco bake
Ingredients:
2 lbs ground beef
1 chopped onion
1 chopped green pepper
2 cloves minced garlic
1 cup salsa
1 pkg taco seasoning mix
1/2 cup water
1 can sliced mushrooms
1 can corn
1 cup sliced black olives
1 cup mexican mix cheese, shredded
1 pkg cornbread mix
Instructions:
Preheat oven to 350 degrees.
In large skillet brown ground beed with onions, green peppers and garlic until beef is cooked.
Stir in salsa, taco seasoning mix and water and bring to a boil.
Reduce to low heat and cook until mixture is thickened.
Stir in mushrooms, corn and olives
Place mixture into a 9 x 13 inch baking dish.
Prepare cornbread mix by pkg instructions, adding cheese and stirring until mixture is smooth.
Spread cornbread mixture over meat mixture and bake for 30 - 40 minutes or until cornbread is golden brown.
Good topped with salsa and sour cream. Serve with side salad.
