Recipe for spicy chicken kabab
The common term kebab refers to, meat that is cooked over in oil or next to flames. The meat can be large or small cuts of meat or even ground meat.
The traditional meat used for kebabs is lamb but other meats include beef, goat, chicken, pork or fish.
The word kebab is derived from the Arabic word “Kabab” meaning fry. According to the Turkish scripts, the dish was invented by Medieval Turkic or Persian soldiers who used their swords to grill meat over open field fires.
Kebabs were served in the royal houses during various celebrations, where warriors and even commoners used to enjoy it with Naan or Pita.
In India these Kebabs are prepared with liberal use of spices as India is the country of spices. Some are of the opinion that these Kebabs are introduced to South Asia during Delhi Sultanate and Mughal era by Muslim emigrants from Middle East.
In India among all kinds of kababs prepared the most popular are Shami Kebab, Kakori kebab and kalmi kebab.
Here is my recipe for tasty Chicken kebab

Ingredients
- 500 gms Chicken breast piece
- 200ml curd
- 2 egg
- 1 tablespoon chilli powder
- required salt
- 100gms cornflour
- 1 onion
- 3 green chillies
- 1 tablespoon ginger garlic paste
- Cut the chicken into medium pieces.Whip two eggs to it add chicken pieces.
- To the curd add ginger garlic paste,chilli powder,salt.Add this mixture to chicken pieces and marinate them for 1 and 30 minutes.
- Heat the oil in pan and dust the chicken pieces in the corn flour and fry them till they become dark brown in color or you grill them in microwave for 20 minutes.
- In a separate saucepan fry the onion and chillies with the little oil.To it add fried chicken pieces and toss it well.serve it hot with sauce of your taste.

Shami kebabs are extremely popular snack throughout the Iran and india,particularly in Uttarpradesh. Shami kebab are boiled or sautéed meet mixed with soaked chick peas, various spices, ginger, onion and garlic. They are then dipped in egg and fried twice before served. They are usually eaten with tomato sauce, mint raitha, or chutneys.
Kakori Kebab belongs to the city of Kakori in Uttarpradesh, India. There is a folklore behind this tasty kebabs that has its name from a village called Kakori on the outskirts of Lucknow.
The story behind its invention is the Nawab of Kakori Syed Mohammed Haider Kazmi along with British officers , was not happy with the texture of kebabs prepared for that day, ordered his cooks to make a more refined seekh kabab.
After a ten days of trial and error they came up with a kebab so soft and juicy which won the praise of the Nawab and his officers.The preparation they came upon included minced meat obtained from tendon of the leg of the mutton,khoya and undoubtedly mix of powdered Indian spices
Kalmi kebab is another popular kebab. This dish is made by marinating Chicken pieces and cooking them in Tandoor. Generous amount of ground spices are mixed with yogurt to reduce the hotness of spices, is commonly used to marinate the Chicken. The cooked pieces are served with mint chutneys, slices of onion and a good squeeze of lemon.
