Chicken and Stuffing with Pimento Sauce
This is an easy dish made with today's boxed stuffing mix and frozen chicken parts. I normally use 2 individually frozen chicken breasts that I precook covered for about 10 minutes in the microwave.
This recipe serves about 6 people and is a very easy recipe to make.
Ingredients
- 4 ounce box chicken stuffing mix
- 2 cups diced cooked chicken
- 4 tablespoons margarine
- 1/8 teaspoon salt
- 1/4 cup flour
- dash of pepper
- 2 cups chicken broth
- 3 slightly beaten eggs
Preparation and Baking
Prepare stuffing mix according to package directions for dry stuffing. Spread stuffing in a 10 x 6 baking dish and top with chicken.
In a saucepan , melt butter; blend in flour, salt and pepper. Add broth; cook and stir until mixture thickens. Stir small amount of hot mixture into eggs; return to hot mixture.
Pour over chicken in baking dish and bake at 325° for about 35 minutes or until inserted knife comes out clean.
While chicken is baking, prepare sauce for serving over chicken.
Let stand for 5 minutes and cut in squares. Garnish with sliced stuffed green olives if desired.

- 1 can mushroom soup
- 1/4 cup milk
- 1 cup sour cream
- 1/4 cup chopped pimento
Mix mushroom soup with milk. Add sour cream and chopped pimento. Heat this and serve over chicken.
