Stuffed Green Pepper Soup-Expect An Empty Pot
This seems to be the favorite at church gatherings, young and not so young. An empty pot always returns home from the youth group meetings and everyone requests any leftovers at family potlucks.
I am having a great deal of trouble getting this published. I'm guessing there are others who have published this recipe as it appears as duplicate content. So one suggestion I could make is to search HP for this recipe or gather the following:
2 lbs ground beef or turkey; 2 quarts water or broth (vegetable or beef);1 (28 oz) can diced tomatoes (undrained);1 (29 oz) can tomato sauce; 2 cups cooked long-grain rice; 2 large peppers chopped to make approximately 2 cups; 2 beef bouillon cubes (unless you're using beef broth); 2 tbsp packed brown sugar; 2 tsp salt; 1 tsp pepper.
Prepare as follows: Drain well after browning the ground beef or turkey in a 6 quart soup pot or dutch oven.
Add 2 quarts of liquid (I use the water with the bouillon) to the meat along with all other ingredients.
Bring to a boil, cover and simmer for 30-40 minutes or until rice is tender.
Makes about 16 servings.
I often use 1 cup of uncooked rice and boil for 5 minutes before simmering. This does make it thicker.
