Spaghetti with Mediterranean Salsa--An Quick and Easy, but Delicious Recipe

If there is one thing I have learned and mastered after having to cook in a house with two small children is meals need to be quick, nutritious and tasty. That is where this recipe comes in for Spaghetti with Mediterranean Salsa. Not only is this dish all of the above, but it is also an excellent summer dish, because the sauce is served cold or room temperature.

Ready in: 20 min
Yields: 4 Servings (1 cup each)

Ingredients

  • Can or 14.5ozs. Diced Tomatoes, Del Monte is the brand I prefer
  • Small can Sliced Black Olives, Store brand is fine
  • 2 Tbs. Olive Oil
  • 1/2 Cup Red Wine Vinegar
  • 1 Tsp. Minced Garlic, Jar is fine
  • 1/4 Tsp. Dried Oregano
  • 1/2 Pkg. Spaghetti
  • 1/4 Cup Crumbled Feta Cheese

Instructions

  1. In a small bowl, stir together tomatoes, olives, oil, vinegar, garlic and oregano.
  2. Cook pasta according to package directions, drain.
  3. Toss Hot pasta with tomato/olive mixture and sprinkle feta cheese on top when serving.

      Vespawoolf, I have used whole wheat pasta and Ronzoni Smartchoice pasta too in the past and both worked out nicely and are a bit of a healthier alternative. Totally try and hope you enjoy.

      I see this is surprisingly slow cal and yet has pasta in the recipe. I love pasta, but have cut back to the calories, but our version is very tasty and doable. Thanks for sharing.

      Thanks Teaches12345, if you use whole wheat pasta or even Ronzoni's Smart Choice Pasta, that does definitely cut down on the calories a bit and have used both as a lower calorie alternative when I needed to and this dish came out just fine. Enjoy and thanks for the comment!!!

      I like this recipe and admit partly because it's quick to make! I don't like Feta cheese though, can you suggest a different type of cheese to use instead?

      Sally's Trove, I love that you can use just about noodle or pasta you want with this one, because it is truly that versatile. The other night I ran out of spaghetti, but felt like this one and ended up using little bow ties that I had in the pantry and it came out delicious still.       Janine, this sounds so yummy - the feta cheese will be lovely and tart next to the tomatoes and olives; all sound like a lovely blend. I love spaghetti done with a nice light sauce like this rather than always with bolognese and I would have garlic bread with it (I love the stuff). My daughter used to love spaghetti when she was a tot - one of my favourite photos is of her absolutely covered in it (and my carpet and table too!). Voted up and shared.
