Spicy Chicken Casserole
This is one of the best chicken casseroles I have ever eaten. And the combination of flavors is oh so delicious. If you like Mexican food and chicken you'll love this delicious spicy chicken casserole.
One thing I suggest you do is prepare chicken thighs by removing the skin and the bone from each and then you want to beat each chicken thigh flat to prepare it for cooking on a grill or in a skillet. You can cover the chicken thighs with plastic wrap while you beat them flat with your meat hammer.
I usually use chicken thighs in a lot of chicken dishes because they are only a fraction of the cost of chicken breast.
You will want to purchase a small package of taco seasoning and sprinkle it on the chicken thighs while you are cooking them. Sprinkle on about half the package and then after cooking for a while flip your chicken thighs over and sprinkle the remainder of your taco seasoning on the other side of the chicken thighs. After your sure your chicken thighs are done remove them from the heat and shred them with a large fork. You will want to save two cups of the shredded chicken meat for your spicy chicken casserole and you can freeze the rest of your shredded chicken so you can make quick chicken tacos another day.
For Your Spicy Chicken Casserole You Will Need.
1. 2 Cups Shredded Chicken Meat.
2. 1 Package Corn Tortillas.
3. 1 12 Ounce Can Chili with no beans.
4. 1 10 Ounce Can Cream Of Chicken Soup.
5. 1 10 Ounce Can Cream Of Celery Soup.
6. 8 Ounces Sour Cream.
7. 16 Ounces Shredded Four Cheese Mexican Cheese., divided in half.
8. 1 1/2 Cups Salsa.
This casserole is really easy to make. You need a large casserole dish and you want to spray it with vegetable cooking spray. Preheat your oven to 350 degrees and meantime while the oven is heating up mix all of your ingredients except 1/2 the cheese in a large bowl and then pour into your prepared casserole dish. Put the other half of your cheese on top of your casserole.
You now want to bake your spicy chicken casserole for 30 -45 minutes or until your cheese is well melted and you can see the contents of your spicy chicken casserole boiling. Remove from the oven and allow to cool slightly before you serve each serving on a bed of lettuce with a spoon of sour cream on top.
This makes a really good one dish meal and it really is only as spicy as you make it. You can if you wish add a 4 ounce can of green chilies to the casserole when your mixing it up. Or you can add a couple of finely chopped jalapenos. You can really choose to add what you like to your spicy chicken casserole.
I often make the spicy chicken casserole and serve it at parties as part of a homemade Mexican buffet. To me its one of the best ever chicken casseroles but I am a big fan of Mexican foods.
