Seems I am always waiting for strawberry season...So I can make this bread..It is so delicious.

Of course living in southern California, I can pretty much get strawberries year round..However they just aren't as tasty as fresh picked grown in the sun, juicy , ripe and red strawberries of summer..

Having said that, this strawberry bread recipe doesn't know that and just makes a tasty yummy loaf of bread any time of year.. As long as I can provide the strawberries ...

Ripe, red, juicy, fresh, strawberries can be frozen, made into jams and jellies, as well as dried and used in prepared foods, such as cereal bars. Strawberries are a delicious addition to dairy products, as in strawberry-flavored milk, ice cream, milkshakes, smoothies, and yogurts. Strawberries and cream is a popular dessert. Depending on where one lives, strawberry pie, strawberry rhubarb pie, and strawberry shortcake are some favorites. We usually sprinkle powdered sugar on them...And now with this recipe we eat it baked in a loaf of bread.

Ingredients For Strawberry Bread

  • 3 cups all~purpose flour
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 2 tsps. ground cinnamon
  • 2 tsps. vanilla
  • 2 cups sugar
  • 2 1/2 cups strawberries, sliced
  • 4 eggs, beaten
  • 1 cup cooking oil

  1. Mix all ingredients together by hand. Add the strawberries last
  2. Bake in a 350 degree oven for 35~45 minutes in small loaf pans. Or around 60 minutes if using 2 large loaf pans

A few tips on how to store strawberries

  • Once strawberries are harvested they do not ripen any further. Look for strawberries that are plump, bright red, shiny and have a healthy looking stem cap.
  • Layer your fresh strawberries on paper towels in a large container or spread them out on a cookie tray.
  • As strawberries are perishable, they should be used or preserved as soon as possible, after they have been picked or purchased.
  • Do Not Soak strawberries as they will become water~logged. To clean your fresh strawberries, rinse them under a gentle spray or stream of cool running water. Caps can be removed with a paring knife or a quick twist.
  • Strawberries should never be washed or the caps removed until you are ready to use them.
  • To freeze strawberries, wash them, remove stems, pat them dry. Lay them in a single layer on a cookie sheet. Place them in the freezer. After they are frozen, place them in a freezer bag or container..Freezing them on the cookie sheet first, will help to keep them from sticking together.
  • Use your frozen strawberries in smoothies..Yum!
