We've love venison, and this tender flavorful roast has been a favorite at our home for year. If you love venison then this recipe is for you. Made with garlic, rosemary and Cajun spice this roast cannot be beat.

Ingredients
- 4 garlic cloves, minced
- 1 Tbsp crushed rosemary
- 2 tsp savory
- 2 Tbsp. olive oil
- 1 Tbsp mustard
- 2 tsp Cajun seasoning
- To taste Salt and pepper
- 1 venison roast
- 1 onion, sliced
- 3 carrots, sliced
- 2-3 potatoes, cubed
- 2 celery, sliced
- 1 bell pepper, sliced ( otp)
- 1 Tbsp roasted garlic
- 1 c dry red wine
- 6 c Venison stock (beef stock if no venison stock available)
- 2 Tbsp Olive oil and butter mixed
- In bowl mix garlic, rosemary, savory, olive oil, mustard, Cajun seasoning, salt and pepper. Rub over roast cover and chill for 8-24 hours.
- Preheat oven to 350
- In Dutch oven add butter olive oil mix brown roast on all sides, remove from pan and,set aside
- Add onion, carrots, celery, and bell pepper season with salt and pepper to taste to dutch oven. Let cook over medium heat for 5 minutes, or until tender. Add potatoes and cook another 5 minutes.
- Add wine and stir scraping the bottom of the pan, cook 2 more minutes.
- Add roast and broth cover and bake at 350 for about 1 ½-2 hours.
