For the bakers out there... I've been playing with kaiser & sub roll recipes for a week...

and finally got one that I love! My problem is keeping it's size and shape consistently. Are you a pro baker and have a baker's couche? Do you use linen? Baskets? Once I perfect it I'll probably add it to my recipe hub but my goal is making delicious sub/hoagie/grinder rolls without all the fru-fru. Thanks!
