Chocolate Mint Meringue Cheesecake
Cheesecake and Brief History
Cheesecake for desert is sinfully delightful. Chocolate Mint Meringue Cheesecake is one of the richest tasting desserts.
Historians believe that cheesecake originated in ancient Greece and was served to the athletes during the first Olympic Games held in 776 B.C. Marcus Porcius Cato's De re Rustica, a Roman politician around 200 B.C., came up with a cheesecake similar to how we know it today.
It wasn't until 1872 that cream cheese was invented by American dairymen, William Lawrence of Chester, N.Y., who accidentally developed a method of producing cream cheese while trying to reproduce a French cheese called Neufchatel.
Cheesecake has become so popular that there are restaurants that specialize in this dessert. The first Cheesecake Factory restaurant opened in Beverly Hills, California, in 1978.
The Cheesecake Factory
We had a chance to eat at this restaurant. If you have never been there, it is a must to find out how good their cheesecake is. One slice is enough for two people. With over 30 different types of cheesecake to choose from.
Ingredients
- 1 cup Chocolate Wafer Crumbs
- 3 Tbsp Margarine
- Melted
- 2 Tbsp Sugar
- 24 oz Cream Cheese
- Softened
- 2/3 cup Sugar
- 3 Large Eggs
- 1 c Mint Chocolate Chips
- Melted
- 1 tsp Vanilla
- 3 Large Eggs for Egg Whites
- 7 oz jar Marshmallow Fluff
Instructions
- 1. Preheat oven to 350 degrees F.
- 2. Combine crumbs, margarine and sugar; press onto bottom of 9-inch spring-form pan.
- 3. Bake at 350 degrees F., 10 minutes.
- 4. Combine cream cheese and sugar, mixing at medium speed on electric mixer until well blended.
- 5. Add eggs, one at a time, mixing well after each addition.
- 6. Blend in mint chocolate and vanilla; pour over crust.
- 7. Bake at 350 degrees F., 50 minutes.
- 8. Loosen cake from rim of pan; cool before removing rim of pan. Chill.
- 9. Beat egg whites until soft peaks form. Gradually add marshmallow fluff, beating until stiff peaks form. Carefully spread over top of cheesecake to seal.
- 10. Bake at 450 degrees F.; 3 to 4 minutes or until lightly browned.
