Ok, I am posting this in response to the "favorite pie" thread. I thought it would be good to get a bunch of good holiday recipes. I have a hub for stuffing... it's a little bit awesome if I do say so myself.
Favorite pumpkin cheesecake recipe
2 8 oz cream cheese
1 C. sugar
1 16 oz can condensed pumpkin pie ... thing... like Libbys or whatever. (I don't want to get too technical on you.)
1/2 C. Karo lite syrup
2 tsp cinnamon or pump pie spice
2 lg graham cracker crusts
beat softened cream cheese and sugar together till slightly fluffy.
add one egg at a time.
add rest of mix
pour in pie crusts bake 45-60 min at 350 degrees
cool whip on top, this is non negotiable.

Thanks Beth I'll have to wait till I unpack and find recipies everything is insane at the moment can't wait to move and get settled in the next 2 weeks...then I'll have more time to find recipies etc...
