is it okay to prepare sweet potatoes the night before and just warm them up the day of serving?
That depends what you are trying to do with them. If you are going to surv a caseroll of some kind, then no, it's not okay b/c all of the liquid will ooz to the top of the dish and you will have to stir it to get it mixed back in and if you are going for a particular look then you will destroy whatever artistic quality you might have had. If all you are trying to do is serv some spwat potatoes with butter and a little brown sugar where you place it on the plate much like a baked potato, then that should be ok so long as you don't add the brtter or the sugar till right beforeyou serv it. (I can't spell, SRY.)
Thomas is right if you have already used the sweet potato as an ingredient in a recipe / meal it's is unwise to serve again. not because of health concerns because as long as you stored it properly it can be reheated and eaten but like for meals such as casseroles the meals appears unpleasant to the eye. However bakes sweet potato in it jacket can be reheated and served again. If you are like me a Jamaican who has tried sweet potato pudding you don't even need to reheat that just serve cold from the fridge. If you are looking for interesting ways to use sweet potato left don't worry there are lots of interesting ways to use this nutritious tuber.
