what mother sauce does alfredo come from?
Béchamel. It is the cream based mother sauce. Its counter is Velouté, which contains no cream but it blond in color.However true alfredo sauce does not contain cream. It is traditionally a butter-cheese sauce (pref. pecorino romano) tossed a la minute with tagliatelle (fresh fettuccine)
