   My favourite is tuna and sweetcorn with lite mayo. Cheddar cheese is of course another winner. Can't stand baked beans though.

   If its a sweet potato, I LOVE topping them with almond butter and cottage cheese. It probably sounds awful, but it's amazing!

      That actually sounds really delicous!  I love topping sweet potatos with a mixture of cinnamon, nutmeg,and ginger. It tastes like pumpkin pie!

   We like to make a whole meal out of one gigantic baked potato, so we like to pile on butter, sour cream, crumbled bacon, cheddar cheese and broccoli.  We only do it once every few months, since it's probably not the healthiest meal, lol.

    everyone always says this one is weird but we would make it growing up and it's the perfect blend of foods for the potato... cream corn, cottage cheese, ground up beef.  Yummy.

    I think the one "problem" with a baked potato is that a healthy food can go downhill fast by loading on a bunch of unhealthy toppings (much like a salad). So,I keep it simple and generally just top mine with salsa. It not only adds great flavor, but because the salsa is cold, it helps avoid the common problem of the burnt tounge.
