We like to make a whole meal out of one gigantic baked potato, so we like to pile on butter, sour cream, crumbled bacon, cheddar cheese and broccoli. We only do it once every few months, since it's probably not the healthiest meal, lol.
I think the one "problem" with a baked potato is that a healthy food can go downhill fast by loading on a bunch of unhealthy toppings (much like a salad).
