Consider freezing, dehydrating, pickling or preserving in oil like antipasto. Canning with a pressure cooker will turn squash to mush because it has to process a long time to cook it through. It is a low-acid vegetable and therefore cannot be canned using the boiling-water-bath method.
I like to make minestrone soup with frozen cubes of yellow crook and zucchini. Freeze some grated summer squash for muffins or squash bread. Dehydrate thin slices of squash until crisp and mill into powder for pureed squash soup. This works great with tomatoes too. Here's a video http://www.youtube.com/watch?v=R_8-iVamYT8
