I make Blackberry Wine every year. I use fresh picked blackberries, sugar, and yeast and it always turns out very good. I use a large 30 gallon plastic container with a lid and I usually add 5 gallons of fresh picked blackberries, 10 gallons of water, 10 pounds of sugar and three packs of regular bakers yeast and I mix it up and watch it. It usually works off for two weeks when I then strain it and bottle it in quart jars. It always turns out great this way and it is always delicious.
