Hi Vivalane, I would suggest either a frittata which is a Spanish crustless egg dish that is served room temperature or a quiche. There are so many varieties of both that you should be able to find a recipe that appeals to you and your guests.

Two egg based dishes that i've made for many a party are Spinach & Potato Frittata, and Ham and Swiss Quiche. The great thing about frittatas and quiche is that there are many different recipe variations for every type of occasion. I especially like making quiche for crowds because they can be made as smaller finger foods (using a muffin pan) or as a traditional larger pie sized quiche. Hope this helps!
