Can you keep the oil in the fryer unit and fry more foods or do you have to drain it ever time...and store the oil in a separate container?
The ideal is to put in a glass container after use, and if you want to use more at once, just put it in the pan again, always do so.
If you are going to use it in a few days, it is fine to keep. If you have any crumbs in it though, you might want to strain it. If it is going to be awhile before you use it, put it in the refrigerator.
I usually replace the oil, as its vegetable based and inexpensive. I think the quality of the taste comes through with fresher oil, especially if I make fried poultry or frybread.
