I think the more natural the better, so try out this: olive oil, fresh coriander and garlic, lots of, put the clams in the pan and wait for them to open, once they are all (or almost) open put them on a serving plate and squeeze juice from a lemon on top of them, then add a bit more of fresh coriander... It's amazing! And it's really easy and quick. Actually you can use this recipe for other shellfish and even for fresh mushrooms.
