Elephant garlic is misnamed. It isn't a garlic, it's an allium related to chives and leeks. Its flavor is mild, and though more garlicky than leeky still in between the two. There's nothing wrong in cooking with it, just don't expect it to taste like real garlic.
Good question Susan. I often wonder myself what was the difference between the two. Now that I know, I also know why I prefer regular garlic. I will let the elephants enjoy their own garlic and stick to purchasing the real stuff that gives you a kick. LoL
Elephant garlic is HUGE. That's the main difference. You'll only need one clove where you would need four or five with regular sized garlic. I cook with it all the time in place of garlic because it's easier to get the amount I need; less peeling, and more chopping.
