How to delay or prevent the chocolate from melting ?
You have seen chocolate decorations put on cake. How the bakers prevent that decorations from melting, when the chocolate we use at home melt instantly ?
You must keep it below human body temperature, the lower the better, though not freezing. There are kinds of chocolate that have been developed that tolerate higher temps (US military designed one for the field, I think, but cannot attest to its taste or texture).

Any tips on melting white chocolate chips? I've used both a double boiler and microwave - no luck.
