What is the best recipe for an egg-less omelet using tofu?
I would rather have a recipe that did not rely on Nutritional Yeast.
I have never tried a tofu omelet, but have cooked scrambled tofu a number of times. Use extra firm tofu and crumble it up. Finely chop onion, celery and carrots. Season with tumeric, which adds yellow color and flavor, of course. Fry in a skillet. Salt and pepper to taste.
I agree with Act 3. I don't know how you would actually make an omelet because the tofu does not form a solid mass. But, tofu scrambles are very tasty. Be sure to squeeze the extra liquid out of your tofu (and YES, please use the extra firm type).
