Please give more info. There is many things that you could be doing wrong. Your temp could be too high or your not covering it when you first start to cook it. . I like to braise on the stove first then into the oven . It holds in the juices .
Hi , I realized I missed that I use an old fashioned roasting pan . Start the meat at 375 . I like to add potatoe and carrots with a little onion . It adds more flavour . I also put about a cup of water in the bottom . The steam helps keep it moist.
