This is how I do it. Wrap a whole head of garlic and separate the cloves, but don't peel them. Wrap them in heavy duty aluminum foil and bake in a 400 degree F oven for 30 minutes. Let it cool after you get it out of the oven and then squeeze the garlic out of the skin.
I have a little garlic roaster. I cut off the tips of the garlic cloves and place them in the garlic roaster. I drizzle a little olive oil over them, sprinkle with salt and roast in a 350 F oven for 30-60 minutes, depending on desired degree of doneness. Then I squeeze the roasted cloves onto bread. Just make sure you have breath mints the next day!
