Kathal recipe-Jackfuit kathal ki sabzi

Jackfruit, kathal in hindi is one of the largest fruit with flesh consistency from inside and pines on the outer side.The flesh of jackfruit/kathal is a good source of fibre with many vitamins, Minerals and health benefits.

Jackfruit flesh when ripe is soft and sweet while unripe green jackfruit has the texture of chicken. This is a very good option for vegetarians as a substitute for meat as it absorbs all the spices.

It gives wonderful flavour when cooked with all the spices. Jackfruit can be purchased fresh or canned in syrup. If using fresh jackfruit don’t forget to oil your hands and knife before cutting because it is very sticky.

Yields: 4 servings

Ingredients:

  1. Jackfruit – 2 cans or ½ kg deseeded
  2. Oil – 2 Tbsps. +for frying
  3. Onion – 1 large
  4. Tomatoes – 2 medium, chopped
  5. Garlic – 4-5 cloves
  6. Ginger – small piece
  7. Turmeric Powder – 1/4 tsp.
  8. Coriander Powder – 2 tsp.
  9. Cumin Powder – 1/2 tsp.
  10. Red Chili Powder – 1/2 tsp. or to taste
  11. Garam Masala – 2 tsp.
  12. mutton masala - 1tbsp
  13. Cloves-2
  14. Bay leaves-2
  15. Water – 1/2 cup
  16. Yogurt – 1/2 cup
  17. Salt – to taste
  18. Coriander Leaves – for garnishing

Method

If using fresh jackfruit cut it into small pieces and remove the seeds. If using canned jackfruit/kathal drain the liquid and leave the jackfruit to dry for some time or blot excess water with paper towel.


1.Heat Oil for deep frying, fry jackfruit till golden brown
2.Keep it aside onto a paper.
3.Make the paste of onion, garlic and ginger
4.In a pan, heat Oil.
5.Add Cloves and bay leaves
6.Now add the paste of onion, garlic and ginger.
7.Cook it till oil gets separated .
8.Add the chopped tomato and cook it
9.Reduce the gas and add turmeric powder, coriander powder, cumin powder, salt and chilli powder mix well
10.Add the water and fried jackfruit. Mix all together .
11.Spinkle the garam masala andthe mutton masala
12.Add the yogurt and mix, cover and cook for further 3-4 minutes (stir in between)

Garnish with Coriander leaves and serve with chapatti or naan
