Healthy Tropical Dessert

Move over Jell-O. Hello Ch-Ch-Ch-Chia. This superfood makes any other dessert look like a chump. Chia seeds have protein, potassium, antioxidants, iron, calcium and omega 3. The refreshing taste of lime, coconut and vanilla almost make you forget this food is just like medicine. The proof is in the pudding though because it feels so good in your belly! ;)

  • Prep time: 5 min
  • Cook time: 10 min
  • Ready in: 15 min
  • Yields: 2


  • 4 tablespoons chia seeds
  • 1/2 cup unsweetened vanilla almond milk
  • 1 lime: juice and shaved rind
  • 1 tablespoon truvia
  • 1 tablespoon unsweetened coconut shavings


  1. Mix ingredients in a bowl and let set for ten minutes or cover and store in the fridge for breakfast
