Pumpkin Maple Almond Pie (Vegan, Gluten Free)

This Fall Fave Doesn't Fall Short on Flavor Without Dairy or Gluten!

No trick; this treat is cow's milk, egg and gluten free. Feel free to enjoy this seasonal dessert all year round. Most of the ingredients are pantry staples except for pumpkin and pumpkin pie spices which aren't hard to find. Make the filling or go all out and make a pie. Don't forget to click on the link to follow the recipe for a quick, easy maple almond crust that bakes in 10 minutes. You'll be nuts about it along with the recipe for home made vanilla extract. This Is How We Do it!

Preheat oven to 325 degrees.

Mix in a bowl:

1 can pumpkin 15oz.

1 cup almond milk

1 tablespoon flax meal

2/3 cup maple flavored agave syrup

3 tablespoons pumpkin pie spice

1/4 teaspoon salt

1 teaspoon vanilla extract

*Pour into pie crust

*Spray edge of pie crust with olive/canola oil or no calorie non-stick spray

Optional: Sprinkle crushed pecans on top

*Bake at 325 degrees for 55 minutes
