Round 'Em Up Easy With My Protein Packed Shepherd's Pie
All the little lambs will be clamoring to your dinner table. The aroma of delicate, nutty, maple crust with chick peas, parsnips, mushrooms, artichokes and olives nestled inside will incite them. You'll have a warm, fuzzy feeling knowing all will sleep well with full bellies. You'd better get used to counting sheep. Rest assured; they'll be baaaaaaack for seconds!
So you can try this at home, kids!
This Is How We Do It!
Preheat the oven to 325 degrees
Spray olive/canola oil or
no calorie non-stick spray on the edges of the pie crust.

It's fast, easy and compliments this recipe perfectly!
1 can chick peas, 16 oz.
3 tablespoons Flax Meal
2 tablespoons garlic paste
1 tablespoon black pepper
1/2 teaspoon chinese five spice
1/2 teaspoon salt
While that's blending together....
SAUTE'!
1/4 cup purple onion
1/4 cup olives
1/4 cup crimini mushrooms
1/4 cup shredded parsnips
1/4 cup fresh or canned baby artichoke hearts
5 basil leaves, shredded
*Mix blended and cooked ingredients in a bowl and transfer to pie shell.
*Garnish with basil confetti
*Bake for 25 minutes at 325 degrees.
