Why should we care about the Universe?

   If the Universe ended at our galaxy would it make any difference to us on Earth?

      That is an odd question.  The universe is infinite balance and if it was to stop, it wouldnt be infinite.  Of course, the change would have an affect on us.
      
      Does a pebble in the pond, not create a ripple?

         Yes, a pebble on a pond works, but it doesn't affect another pond.
         
         And the universe is not in balance as it is suspected to be expanding.

      Why should we care about the Universe? You should only be glad it presently exists, for which, continues to support human life.
      
      As for your second question-
      If the Universe was finite, then yes, the collective knowledge would be altered.
      
      Is that "good" or "bad" for human life on Earth? Isn't worthy of thought. It's actually irrelevant compared to what is knowable.

         What collective knowledge have been gained by anything outside our galaxy or even our solar system.
         
         I see that the universe has taught you how to use the words irrelevant and not worthy of thought. The creator must be very proud.

      If the universe ended at our galaxy, there would be no constellations.  Navigation by the fixed stars would not be possible Greek gods would need other coat hangers to latch on to. You would have to wonder what was at the boundary. Would energy reflect off it and bounce back? Would this cause turbulence in our galaxy? Would the energy get perfectly absorbed? This would make the dark sky very very black and very very cold - absolute zero in fact (which is not the case in our real universe). Life may not have happened. There may not have been enough events to marry up the right chemicals and processes for life.

      Because, we are Alive ... and Being alive means, our Awareness, of whats Existent ... Thats why, we cannot help caring about the Universe ... because, Universe represents the Physical cum Ideal Totality of Creation, and this Awareness, is Life ...

   I am sure our culture would be diferent in many ways if we had not come to understand how vaste and complex the universe is.  But it is so hard to imagine not knowing that, I am not sure how.

   It would be a suppression of the human spirit to not continue to venture outwards, no?
   
   People once thought the earth was flat. Imagine if they were content with this theory, and never ventured further?
   
   There is so much mystery in the universe; and where there is mystery, there is knowledge to be obtained.
   
   Space exploration can also be viewed as an investment in our future. We may not be able to rely on the Earth forever. The more we discover about our universe, the more we can master problems affecting us here at home. Also, if we as a species ever need to leave earth, we certainly won't know where to go if we cease space exploration!
   
   Space travel is indeed expensive and the benefits aren't exactly seen right away. But it is damn fascinating! -- and the potential it holds is certainly worth it IMO!
