So far I've only found the classics to be worth the time.  I haven't had much luck finding quality self-published books.  I know they're out there, just hard to find.

Learning how to find really good free books on Kindle or any eBook system is what I am trying to learn.

Absolutely.  Things from Poe to Machiavelli to Confucius to U.S. Grant to all sorts of novels, religious books, Civil War books, and the ever popular Etcetera!

There are lots of classics...Jane Austen, Dickens, and others.  Not sure about easy read.  Pretty much anything published before 1927, I think.

I downloaded the entire Jane Austen collection on my Kindle for free and I was excited. The key is to check every couple days because they constantly change. Also another helpful hint is you could search by which genre you would like to find free books in, it would help lessen the results a bit.

Searching by genre is a great idea. So, you are saying to refine the search and that helps find a free book worth reading.
