    It is Zuchini season. What do you do with your zuchini's?

    I have cut them in raw strips then dipped them into ranch dressing or loaded the big ones with a ground meat mixture with tomato sauce, rice and baked them in the oven. I am looking for new ways to use up zuchini. What do you do with Zuchini?

    I love zucchini.  I either cook them in a little oil until both sides are brown and eat with other veges or grate them into omelettes, frittatas, lasagne, vege burgers etc.  Enjoy

    Hi suzzycue!
    Zuchini can be cooked the same way as Pumpkins. Add finely cut Zuchinis in a teaspoonful of vegetable oil, add a little salt and green or red chillies, if you prefer.
    You can even grate them and mix them in your bread or cake batter to get wholesome nutrition.
    Another option is to cut them finely and boil for a minute or till tender. Squeeze out the water, let it cool and add yoghurt, salt, roasted and powdered cumin seeds and finely cut green coriander in the Zuchini. This is a variation of Raita. You can use the discarded water for kneading dough.
    You can use the thin Zuchini rounds with your favourite toppings or mayonnaise.
    I liked your version of cooking Zuchini.

      Yes Zuchini boats are awesome. Sounds like you cook a lot with zuchini ChitrangadaSharan. Thankyou for all the recipes. I will be giving these a try. I also like it fried in a little butter salt and pepper.

    My grandfather used to grow giant size zucchini.  My grandmother would fry it up and serve it as a side with our summer meals.  I love it fried.  I also love it steamed with yellow summer squash with a little herbal seasoning.  I've also made the zucchini boats.  They really are delicious.

    Another zucchini boat idea is to make them with a meat mixture, cover and bake with cheese.

    I've recently come across a honey and herb vinegar.  I've been using that on my salads with olive oil.  I bet that would be good with the zucchini strips too.

    Try zuchini fries using tempura batter!  However, for weight watchers if you don't like it fry, you can also bake it. smile Enjoy!

    I make Zucchini Bread III from All Recipes.com.  If I have a whole bunch of zucchini, I cut up 2 cups' worth and freeze however many individual bags of that I can get so that it will be ready for when I want to make a loaf later on in the fall/winter.
