    It really depends on the food. Many things at the beginning; but hard beans should wait til the end as the salt will inhibit them from softening.

    In the case of most foods like meats, I salt them before cooking them. Most vegetables I salt at the beginning of cooking but I put in one half the amount I think I need; then at the end of cooking I add to taste. I am on a low sodium program and this works for me.
