    That person most likely has Elhers-Danlos Syndrome, a connective tissue disorder that makes joints too flexible. "Double jointed" is a bad way of saying too flexible.

    Being able to bend the joints in a greater degree than is usual. So-called double-jointedness is due to the ligaments which hold bones together at a joint being abnormally loose.

    The contortionist can bend himself into extraordinary shapes because by long practice he has stretched his ligaments.
