I would not go so far to say better. As better is subjective.
What I can tell you is think of your spine as a lever. The longer the upper and lower joints move out the more stress. Also people with tight hipflexors, low back pain, or weak core and feel pain with v ups.
But when ready and able and no body issues V-ups can be good i believe.
It depends on what your goals are. Crunches usually work your upper abdominal region while v-ups will target your lower abdominals as well. As we all know, the lower abdominal region is a major issue for most people so v-ups are a great exercise for targeting this area.
