I'm looking to get some cushions covered in Sunbrella fabric and I'm curious if there is a color that hides dirt or wears better when it's used outside.

If you can't find a nice or pretty pattern you like, my husband says gunmetal gray goes with every thing. lol
Really though, patterns hide dirt more than solids or stripes.

Whatever color the dirt is in your area! Could be red-orange; brown; tan; charcoal gray....the color of dirt varies with the local geology.
Usually it is a dark black or a dark brown (chocolate).
From my experience a bottle green and white or navy and whit stripe canvas type lounger cushions are great for concealing the odd spill and scuff mark.
I was going to say the same thing as Rachel. I'd say if you go with a solid color mid-range grays or browns may hide the most.
Grey is the best color to camouflage dust, since it's the closest match to the color of dust. I agree with RachaelOhalloran, design patterns make the dust even more invisible :)

I would also recommend outdoor fabric, water resistance, and can be cleaned with bleach and water.
