Unlike with Windows, Linux distros come preloaded with much of the software you may need. Anything considered "essential" is part of the basic desktop/server installation.
The programs you are most likely to use on a desktop computer include Firefox, OpenOffice and Evolution (email client). All of those are on the basic install of desktop CentOS as well as pretty much any other desktop Linux distribution.
