I'm still learning so much of the technology others take for granted. I'm deciding weather or not I need to buy PhotoShop. I have some pictures that have the date stamp on them and want to remove it. Would PhotoShop be the way to go?

No! A program that is just as good but free is called the Gimp. You can get it at http://gimp.org. I use it for all of my graphics and I like it better than photoshop. No catches or anything, it's a free program that is open source. Easy to install. It takes time to learn it and get used to it, but no different than with photoshop.
Photoshop is a professional graphics and photography program. If you are serious about work, then yes. If not--and what you want to do is for hobby purposes, then there is Photoshop Elements, or the other good suggestion just above.
