Southern Cooking Brings Soul To Food

I was born and raised in the deep south. As far back as I can remember I can remember drinking big glasses of my Grandmothers Iced Tea and shelling peas and breaking green beans out on the porch with my Grandmother and Mom. From time to time various Aunts , Uncles , and cousins would show up there on the porch to help prepare food and tell tall tales. Over time my Mom and Grandmother passed away and I moved on to other parts of the world but all my life I have remained a huge fan of southern cooking. And it is southern cooking that I have worked all my life to perfect and cook the perfect southern dishes.

While I was growing up my Grandmother Hattie Propst taught me how to fry chicken and I think I truly make the best southern fried chicken that I have ever tasted. And many years later and several states away a 83 year old African American lady named Alice Brown taught me how to take southern fried chicken to another level by turning that southern fried chicken into the best barbecue chicken I have ever tasted. My mother Virginia Propst Walker taught me much about cooking. The most important thing she ever taught me about cooking was to stick to the basics and never over season. She taught me how to cook the best green beans , cabbage , and banana pudding I was to ever taste. She was the one that taught me how to make a dressing for chicken or turkey that is the best anyone has ever tasted. Those three women taught me southern cooking in a way that you could never learn in a class room or in a cook book. I considered all three women to be living breathing cook books and they taught me much. Here I plan to share a part of what they taught me with you.

It was only many years later at a little sidewalk cafe in Bangkok Thailand that I discovered that not all tea comes iced in a glass. It was also about that same time that I discovered that not all vegetables have to be soaked in batter , dredged in cornmeal and fried. Southern cooking though is truly the best in the world and you will never find anything else like it in the world.

You have never lived until you taste free range chicken like was served for many many years in the deep south. Okra is another thing that comes to mind. I have some growing outside the window right now. And okra is one of the most delicious foods you will ever taste or cook with. I love it individually breaded and deep fried and I also like it in delicious gumbos where it really becomes the heart and soul of that dish. Okra also makes a wonderful thickener for delicious southern soups. And if your lucky enough to know exactly how to make it stewed corn , okra , and tomatoes served over cornbread hot from the oven is one of the most delicious southern dishes I have ever tasted.

People in most parts of the deep south of the United States were very poor and they learned to make do with what they had and they learned to make some of the most delicious food in the world with what they had. And even today you will find some of the poorest people in America in the deep south but also the most generous. In even the poorest homes in the deep south they have some of the most delicious food you will ever taste and you'll never be turned away with an empty stomach. One of the most delicious meals I ever remember being served was cooked down along some riverbanks in Alabama. It was Cajun Catfish , homemade hush puppies , fresh cut french fries fried golden brown and some of the most delicious slaw I have ever tasted.

Gumbo oh man Gumbo. I remember my Grandmother Hattie Propst making Gumbo and how we would all gather around setting on my Grandmothers front porch and eat big steaming bowls of Gumbo served over huge cornbread squares fresh from the oven. I remember my Grandmother teaching me how to make roux. She said your roux had to be the same color of a river just after a big rain. The roux you make for your Gumbo is as important to your Gumbo as the Okra. And you know perhaps its the seasonings that are used in southern cooking or it could be the okra or the roux. Or it just might be that some of the best cooks in the world are found all over the deep south. And that there are a lot of front and back porches located all over the deep south. And the laughter , family ties , and friendship there on those porches just might have something to do with why southern cooking and soul food is truly some of the best food on earth.

And we have to remember the wonderful desserts like pralines , pecan pie , home churned ice cream , apple pie , and Mississippi Mud Cake.
