Bigger pieces of fruit will not make a higher fruit content, half a pound of fruit either in large or small pieces is still half a pound. There is proportionaly more fruit to sugar and water in fruit preserve than in jam
You're right, of course, MickS, I phrased that wrongly. I meant that bigger pieces would APPEAR to have more fruit--advertising gimmick...
