I haven't made my own pasta, but have a real fondness for it and am happy to eat the packet variety.
Most packet pasta is simply boil for however long it suggests in salted water.
I have found that whilst the instructions tell you maybe eight to ten minutes of boiling, you should test a piece first as often it's still hard.
Pasta should be 'al dente' or to the tooth, which means it should have a little bit of resistance to biting and not be totally sloppy, but you're the best judge of what this point should be.
Drain the pasta once cooked and sprinkle with a pinch of salt, a pinch of pepper and a small drizzle of extra virgin olive oil.
Toss the ingredients for a few seconds to ensure it's all mixed and then either add the sauce or place on the plate or in the bowl.
