   Never hit your cat--you run the risk of damaging its kidneys.  Instead get a spray bottle and spray it with water when it jumps on the table.  You can find one at your local pet store.

   You spank your cat?!?! I'm quite shocked, never hit a cat! Just simply pick the cat up from the counter put him/she on the floor...carefully! The cat may get up there again, but you just do the same, they get the message in the end.

   I agree with Silver Poet. Don't spank your cat. They don't understand and it doesn't teach them anything. The best option I have found as an owner of cats since birth is the water bottle. More often then not I don't even have to spray my cats anymore. I just show em the bottle, they glare, and then get down or stop doing whatever bad thing they had gotten into.

   either a spray bottle with water in it, or a soda can with pennies in it.  the loud noise scares them and they associate it with where they are not you

   My cat used to knock things off my night stand in the middle of the night, and it drove me nuts. I swear she did it just to wake me up.
   
   She woke me up one night and the only thing I had within arm's reach was a bottle of perfume, which I sprayed into the air above her (NOT in her face)...and she jumped right off the stand and never climbed up again.
   
   A spray bottle of water or vinegar, or anything else that is startling and unpleasant would work just fine in your kitchen.
   
   I've also heard of people putting duct tape sticky-side up on the counter... it's not that practical when you're actually using the kitchen, but I would think it has a lasting impression if the cat jumps up and lands in sticky tape. (not to mention hilarious)

   I use this method to keep dogs from jumping onto the furniture - it may work for cats on counters too.
   
   Go to your local home improvement store and buy a section of vinyl carpet protector (you know- the runner type stuff that is clear but is put over carpets to protect them?  It has a nubby side so it will stay put on the carpet).
   
   Place the vinly protector material NUBBY SIDE UP on whatever surface you want the animal to stop jumping up on.  When they do, they hit the nubby vinyl and they DON'T like it at all!  And it doesn't hurt them either.
