It helps them in digest their food. Dogs are carnivores. Eating small amounts of grass provides the necessary fiber they need to help pass along the meat (or dog biscuits) diet they are on through the digestive system. B.t.w. cats do the same thing.
I've always been told that when dogs eat grass, it's because they are sick. It helps with their digestive tract.
I've noticed that my dog eats grass when she's sick to her stomach (it causes her to throw up whatever was causing the problem) or when she's constipated to 'get things moving along' again. In any case, it's to help her digestive system work (one way or the other).
