What is the best way to sew emblems on uniforms so they stay straight and do not look lopsided?
The easiest way to get an emblem to look right on a uniform is to pin it in place while the uniform is being worn. This lets you get the placement just right. Once pinned, have the person take the uniform off and then do the sewing. You can either sew the whole thing by hand, or do a few hand stitches to really secure it and then machine sew.
I'd mark it with chalk, then use an embroidery hoop, then do the invisible stitching to finish it. Rather than stitch around it in one long go, stitch a little at the top, then the bottom, then the sides. It won't budge when you finish it up.
