If I create a hub that is a list - say 50 Essential Herbal Oils - or 100 Basic Yoga Positions for People 60+ - can I make each separate entry a link to websites that have more specific scientific information say, or an image of each particular herb or yoga position? How do I go about compiling such a list? Would I have to incorporate each link in sentences, which would be pretty labour intensive. Or is best to have only a few entries as links and fill in with advice and informative text?
Yes you could - but a list of links is not a Hub.
If all you've got is a list of links then it won't be published. You need to add your own commentary about each one.

Also, if you're going to have 60+ external links to a hub, even with original content written by you, it may not get published or the links may be snipped.
I don't think even that much is allowed. If you list 100 ways of doing yoga you may at the most add 20 links only that too with your own elaborations for adding those links.
I don't consider it to be a good practice for any writer.
